Roasted Broccoli Salad


I love it when I can make any side dish in advance. This recipe is a new find, and definitely something I will be making a lot over the summer. Have you noticed that almost everyone loves broccoli? Especially when its roasted, or in this case, pan seared.

The best part about this recipe is, the longer it sits, the better it gets!

INGREDIENTS:

  • 2-3 Broccoli heads, about 1.5 pounds
  • extra virgin olive oil
  • kosher salt
  • 1 Tablespoon vinegar, such as apple cider vinegar or white wine vinegar, plus more to taste
  • 1 teaspoon honey, plus more to taste
  • flakey sea salt for finishing
  • 5-6 Medjol dates, pitted and roughly chopped
  • 1/2 C salted almonds, roughly chopped
  • 2 oz. sharp cheddar cheese, shaved with a knife or vegetable peeler

INSTRUCTIONS:

  1. Cut heads away from the stems. Set aside. Trim the ends of the stalks and halve lengthwise. Cut broccoli heads in half.
  2. Heat large skillet over medium-high heat. I use a dutch oven – I love my Le Creuset, but any kind will do. Add 2-3 teaspoons of olive oil to the pan. Place broccoli cut side down in pan. Sprinkle with salt and pepper to taste. Cook undisturbed for 5 minutes, or until the undersides are well browned.
  3. Turns heads over and cook for about a minute more, just until they get lightly browned. Transfer to a cutting board.
  4. When cool enough to handle, roughly chop all of the broccoli and place in a large bowl. Add the vinegar, 1 Tablespoon of the oil and the honey. Add sea salt. Toss and taste. Adjust seasonings according to your liking. I like to add a little more vinegar. 
  5. Add almonds and dates. Toss again. Add cheddar and toss one final time. Serve immediately or let it sit for hours. It gets even better as it sits.

Serve immediately or let it sit up to 4 hours.
