Georgia O’Keeffe’s Overnight Oats


This is a follow up from my post about Georgia O’Keeffe’s home and studio that can be found under the heading “Around the Globe.” I had saved her recipe for many years, and after my visit to her kitchen, I was motivated to make them.

Georgia O’Keeffe was most definitely ahead of her time when it came to healthy eating, considering she was making this recipe in the 1950’s.

With just a little effort before heading to bed, you get to wake up to a fun and healthy breakfast chock full of protein and fiber. Top it with fruit and nuts (I added honey on top), and this becomes even healthier, full of antioxidants. I adapted the recipe a little bit as I found her version had too much liquid for my taste. Feel free to add more water (or oat milk) if you’d like. This keeps really well in the refrigerator for several days.

INGREDIENTS

  • 4 T Wheat Germ
  • 4 t Oats (not quick cooking)
  • 3/4 C water or milk
  • squeeze of lemon juice
  • fruit
  • honey
  • nuts

     

INSTRUCTIONS:

  1. Mix oats, wheat germ and water in a bowl. Cover and refrigerate overnight.

  2. Add the rest of the items to taste.
